Eat : Pesto Parmesan Salmon

Ok, this recipe is super easy. First you'll need salmon filets (fresh is best) and the redder the salmon, the better. Sprinkle with salt and pepper. I smeared pesto (you can use any kind, we just keep a jar on hand in the fridge) on top so they were covered. Lastly, I sprinkle parmesan cheese (enough to make a decent coat) on top of the pesto. Bake at 375 for 15 mins (depending on on the thickness and size of your fillets). Rest for 5 mins before serving.

I serve this with wild rice and broccoli or asparaus. Yum.
