Eat : Paula Deen's Sweet Potato Biscuits

I was trying to come up with some new, bread-like menu ideas for Blair when I searched Paula Deen recipes and found this. It was a huge hit with my picky daughter and not so picky hubby. Delish!

Paula Deen's Sweet Potato Biscuits

  • 1 1/4 cup of all purpose flour
  • 2 heaping Tablespoons of sugar
  • 4 teaspoons of baking powder
  • 1/2 teaspoon salt
  • 3/4 cup mashed, cooked sweet potatoes
  • 1/2 stick softened butter
  • 2 - 4 tablespoons milk (depending on the moisture of your potatoes)
  1. Preheat oven to 450 degrees.
  2. In bowl, sift flour, salt, sugar, and baking powder.
  3. In a separate bowl, mix the sweet potatoes and butter. Add the flour mixture and make a soft dough.
  4. Add milk one tablespoon at a time and cut in.
  5. Turn the dough onto a floured board and roll out into a layer of dough about 1/2 inch thick.
  6. Use a cookie cutter or biscuit cutter to punch out your biscuits. Place on cookie sheet and top wih a little softened butter.
  7. Bake for 15 minutes. If they start to brown too quick, turn your oven temperature down.

Super easy and yummy. Plus my picky toddler likes them, so they are a win in our house! Love, love, love Paula Deen. She has THE most delicious food!
