I was trying to come up with some new, bread-like menu ideas for Blair when I searched Paula Deen recipes and found this. It was a huge hit with my picky daughter and not so picky hubby. Delish!
Paula Deen's Sweet Potato Biscuits
- 1 1/4 cup of all purpose flour
- 2 heaping Tablespoons of sugar
- 4 teaspoons of baking powder
- 1/2 teaspoon salt
- 3/4 cup mashed, cooked sweet potatoes
- 1/2 stick softened butter
- 2 - 4 tablespoons milk (depending on the moisture of your potatoes)
- Preheat oven to 450 degrees.
- In bowl, sift flour, salt, sugar, and baking powder.
- In a separate bowl, mix the sweet potatoes and butter. Add the flour mixture and make a soft dough.
- Add milk one tablespoon at a time and cut in.
- Turn the dough onto a floured board and roll out into a layer of dough about 1/2 inch thick.
- Use a cookie cutter or biscuit cutter to punch out your biscuits. Place on cookie sheet and top wih a little softened butter.
- Bake for 15 minutes. If they start to brown too quick, turn your oven temperature down.
Super easy and yummy. Plus my picky toddler likes them, so they are a win in our house! Love, love, love Paula Deen. She has THE most delicious food!
